Ingredients:

  • 8 large eggs
  • ¼ cup of heavy cream
  • 1 tablespoon of olive oil
  • 1 small diced onion
  • 1 diced bell pepper
  • 1 cup of halved cherry tomatoes
  • 1 cup of spinach leaves
  • ½ cup of feta cheese
  • Salt and pepper to taste

Method:

  1. Preheat your oven to 190ºC
  2. In a bowl, whisk the eggs together, with your cream, salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add diced onion and bell pepper, sauté until softened.
  4. Add cherry tomatoes and spinach to the skillet, cook until wilted.
  5. Pour the egg mixture over the vegetables in the skillet, ensuring they’re evenly distributed. 
  6. Sprinkle the feta cheese on top. 
  7. Transfer the skillet to the oven and bake for 15 to 20 minutes, or until its set in the middle and lightly golden on top.
  8. Slice into wedges and serve warm. 

You can also add diced ham, cooked bacon, or crumbled sausage for some added protein. 

Honey Glazed Ham with Hashbrowns

Ingredients

  • 1 ham
  • 2 tablespoons of olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method:

  1. Preheat the oven to 200ºC
  2. Toss the ham in a baking dish with olive oil, honey, salt and pepper.
  3. Roast in the oven for 20-25 minutes, or until tender and caramelised.
  4. Garnish with fresh parsley before serving.
